Today was the first day on Table D'hote week. We had to be in the kitchen before 08.00 o'clock. After arrived in the kitchen, we stand on oneline. Before we in, first we did attendance and checked the tools, such as kitchen utensils and self attributes. After all was completed, we went into the main kitchen and stand on oneline again.
Before started the practice, we were given the directions by Chef about recipe rotation 1.1, such as chicken salad hawaian, shrimp bisque, beef stew, zucchini a'la provencale, baked potatoes, french bread and yellow butter cake. We were given an explanation about how to cooked the dishes. As long as Chef given an explanation, we got a lot of knowledge, especially about Table D'hote, which mean the list of dishes that consisting of several groups of dishes, such as appetizer, soup, main course and dessert. Besides that, we also got the knowledge about the terms of dish, such as Grana Padano wich mean the parmesan cheese in the form of large circle, Monte' Butter which mean put the butter into the soup when it will serve, Beef Goulash which is another name of beef stew and Choux Paste which is choux dough before baking.
Before prepared the ingredients, we were divided into four groups for handled the dish accorded with the section. My group got the task for made the dessert, such as french bread and yellow butter cake. After that, we started the prepared at 10.00 o'clock. But for the dessert, we made it today and will be serve tomorrow at lunch. For yellow butter cake, we also made the frosting to be smeared on the outer layer. As for the ingredients, such as cream cheese, sugar, lemon juice and whip cream.
After all was done, we stand on oneline and divided the sections for cleaned. At 17.30 we did general cleaning, and after done, we took a rest a while. Next, at 19.00 o'clock we stand on oneline and prepared for back to home.
