Daily Activity (English Version) #1 " Prepared American Latin Menu "
Hi all! Finally after the semester breaks for almost 2 months, we're back on campus activities as usual. And today was our first week to practice in the kitchen on 5th semester. In this semester we'll do many things, like the variety of products we'll make.
On the last blog I've said that our final test was delayed and will be held at the beginning of 5th semester practice. But today there've been some changes, such as formed the new team, up to the different menu from the menu that we've compiled based on the practice team in the previous semester. Besides that, our system on practice of this week is to sell using the Fast Food concept, where we'll make the order in unit or per-portion, start from Appetizer, Soup, Main Course, Dessert and Good For Sharing. We also prepared the packaging for our menu and made the coupons to share with students for free. This week we provide the Korean Food and American Latin Food. And our team handled the American Latin Food, such as Pastel de Queijo, Parihuela, Lomo
Saltado, Pique a lo Macho, Quindim and Coxinhas.
Fyi, today our team only did some preparations, because our menu will be sell on Wednesday. Before we started our practiced, first we received some directions from Chef in-charge about all menu preparations. After that, our team was discussed and divided the task to handled each menu.
As for my task was handled the Good For Sharing menu, it was Coxinhas together with my two friends of our team. Coxinhas is one of dish from Brazil, the shape and the taste are similiar with Croquette, but the ingredients of the dough are made from flour, butter and fresh milk. Besides that, the characteristic of this dish is the stuffing that made from sautee minced chicken with mozzarella cheese. We started our preparation to made the dough, then made the stuffing, and the last was breaded processed, then stored in the freezer.
